Local Product and Food Waste Reduction
We are committed to reducing food and beverage waste across our restaurant, café, bar and events. Our chefs have carefully curated innovative menus that avoid excess inventory and are suitable for all of our food & beverage outlets.
With a paddock-to-plate philosophy, our on-site Newmarket Room Restaurant offers exceptional culinary experiences using fresh and local produce. While high standards for food appearance and portion sizing can often lead to excess ingredients, our team take proactive steps to minimise waste.

Solar Energy
In 2024, The William Inglis Hotel launched a major project to implement solar energy solutions to combat rising energy costs and strengthen our commitment to environmental sustainability. The project’s goal was to build a system that would both lower operational expenses and reduce carbon footprint across our 24-hour operating venue.
Since the installation in November 2024, we have seen major benefits including:
– 30% reduction in energy consumption
– 450 tonnes of CO2 emissions avoided annually
This investment has significantly lowered operating costs while reinforcing our commitment to environmental responsibility.
Accommodation
Our commitment to sustainable practices also reaches extends into every guest room. In June 2025, we introduced DreamGreen pillows in all 144 accommodation rooms at The William Inglis Hotel.
Each pillow is made using 23 recycled plastic bottles rescued from oceans and landfills and transformed into the ultra-fine microfibre seen in these pillows.
This is part of our ongoing effort to not only make your stay as comfortable as possible, but also sustainable.
Reducing Single Use Plastic
We have also made it a priority to eliminate single use plastics throughout the hotel. This includes replacing plastic amenities with reusable alternatives and working with suppliers who share our environmental values.
